A quick and easy spaghetti for one recipe using “leftover” ingredients found in your fridge! A great way to clean out the refrigerator and enjoy a delicious meal.
It’s no secret that pasta is a staple in our house when I need a delicious, filling meal to feed the family, but it’s also my go-to when I need a quick lunch for myself. I was feeling lazy and didn’t want to make my usual simple Alfredo sauce, so I decided to throw in whatever was leftover in my fridge. It’s true when they say that necessity is the mother of invention. I had some cream cheese leftover from my Green Chili Cream Cheese Chicken Enchiladas and I always seem to have a little tomato paste just waiting to be used up. Toss in a a sprinkling of grated Parmesan and a splash of cream, and viola- a delicious, no fuss spaghetti for one!
This recipe could also easily be doubled or tripled to serve more, and the best part is that it can be tailored to your preference. The measurements are more of a “suggestion”, so you really can’t go wrong if you get a little heavy handed with one or don’t have quite enough of another. This is seriously one of my favorite things to whip up for myself because it’s not only delicious, but can be ready in under 10 minutes!
Ingredients
- 4 oz thin spaghetti noodles
- 1 tbsp tomato paste
- 1 oz cream cheese
- 1 oz Parmesan grated
- ¼ cup heavy cream
- Salt to taste
- Italian Seasoning to taste
- Red pepper flakes optional
Instructions
- Prepare noodles as directed on the package. Drain. Immediately add in all remaining ingredients. Stir well.
