Pumpkin Oatmeal

We have been on an oatmeal kick lately since I discovered how to make oatmeal in the Instant Pot. I make a big batch for the whole family and then let everyone choose their own toppings. Most of us choose brown sugar and pecans (plus heavy cream for me, raisins for Eli), while my husband prefers to stir a big dollop of peanut butter in his.

I had some leftover pumpkin puree in the refrigerator and decided to make this pumpkin oatmeal for a yummy fall breakfast treat. The result was all the delicious flavors of pumpkin pie mixed with the good-for-you oatmeal breakfast that you can feel good about!

Pumpkin Oatmeal Ingredients

You only need a handful of ingredients to make this easy pumpkin spice oatmeal:

  • Old-fashioned (rolled oats)
  • Water
  • Salt (optional)
  • Pumpkin puree (not pumpkin pie filling)
  • Brown sugar
  • Pumpkin pie spice

Be sure to use old-fashioned, rolled oats for this recipe (the flat, flaky kind you would cook on the stovetop for five minutes.) The salt is optional but I highly recommend it. (The point of the salt is not to make the dish salty, but to enhance the flavors.)

How to Make Pumpkin Oatmeal

I prefer to make this pumpkin oatmeal recipe in the pressure cooker. Instant Pot Oatmeal is ultra creamy and super easy.

  1. Combine oats, water, and salt in the Instant Pot.
  2. Close the lid and make sure the sealing valve is turned to the sealing position.
  3. Cook on high pressure for 4 minutes.
  4. When the oatmeal is finished, carefully do a quick release.
  5. Add the pumpkin puree, brown sugar, and pumpkin pie spice to the pot and stir well.
  6. Serve and top as desired.

If you would like to make this recipe on the stove: follow the cooking directions for your oats (be sure to use the oats to water ratio as indicated on the package) and then stir in the pumpkin puree, brown sugar, and pumpkin pie spice once the oatmeal is fully cooked.

Tips for Making Pumpkin Oatmeal

Foamy foods (like potatoes or thick soups) can often cause a messier splatter during the quick release depressurization. Others have recommended putting a paper towel over the valve during this process.

Make sure to use a different sealing ring for sweet and savory! This is crucial or your oatmeal will taste like it was cooked with chicken broth. This is the 2-pack of sealing rings I bought; I use the blue for sweet and the red for savory.
