March is in full swing here in Texas, though the weather can’t seem to make up its mind between winter and spring. Our kiddos have been on Spring Break this week and the cooler temps have me wishing I was sitting somewhere sandy, under an umbrella, with another [miniature] one in my drink. Instead I am making up a big batch of these Slow Cooked Bacon and Beans to keep us warm. (Not to be confused with the yummy Bacon Baked Beans I made last week. We’ve been on a winter comfort food kick lately.)

Because I am recovering from surgery (see: Instagram) we don’t have any big plans this week. James took off two weeks to help me recover, so it’s been nice to just spend time all together at home without any pressing plans. Though, I think we are all starting to get a little stir crazy. The DFW Auto Show will be in town next week, so if I’m feeling more mobile, we might venture out to that. It’s always fun to see all the different vehicles- Sophia is obsessed with the trucks, while Isabella has an eye for the finer, luxury cars.

The Show is open to the public from March 22-26, 2017. Ingredients
- 1/4 cup onion diced
- 2 cloves garlic minced
- 6 pieces bacon cooked
- 32 oz chicken stock
- 1 lb Great Northern Beans
- 1/4- 1/2 tsp red pepper flakes
Instructions
- Start by soaking your beans overnight: Rinse the beans under cool, running water and remove any unappealing beans. Transfer them to a large bowl and cover with a few inches of clean water. Let sit overnight. Drain before cooking.
- Add the cleaned beans to a slow cooker.
- Crumble the bacon and add to the slow cooker with onion, garlic, and red pepper flakes.
- Add enough chicken stock to cover the beans about 2 inches. (This will vary depending on the size of your slow cooker).
- Cook on low for 5-6 hours, until the beans are soft and most of the liquid has been absorbed.
- Season with salt and pepper and more bacon as desired.
